On Sunday, Shokhsanam came by Mary’s apartment to show Mary and me how to make plov. This is useful (especially for Mary and her daughter) because it is very difficult to find vegetarian meals here. Even if you order something without meat, it’s going to be cooked with meat broth or lard. Basically, vegetarianism isn’t a thing here. You can tell this by what’s in the grocery store: the produce section is very small.

So Shokhsanam showed us how to make plov; she just left the meat out. Final list of ingredients: rice, carrots, raisins, onions, garlic, and garbanzo beans. Normally you would layer the plov with meat on the bottom of the pot, then the onions, carrots, beans, and rice. You only mix it once you’re going to serve it.
